Creamy, Dreamy Tiramisu for Two

Picture this: You and your partner have just finished a cozy Italian dinner (maybe Bellisima Bigoli Beef Ragù?) and you’re craving something sweet. This quick 10-minute tiramisu is the perfect finish — it’ll satisfy your sweet tooth and might even give you a little burst of energy to tackle the dishes afterward.
“Tiramisu” literally means pick-me-up — fitting, since coffee and cocoa are the stars of this dessert. We’ll use a beautifully fruity, chocolatey coffee from Sunbeam (featured in our Gourmet Coffee Box) as the soak for our ladyfinger base, then top it with a whipped mascarpone cream for a rich, decadent bite to end the meal on a high note.

Equipment
- Whisk or hand mixer with whisk attachment
- 2 small ramekins
Ingredients
- 1 egg yolk (room temperature)
- ¼ cup granulated sugar
- ⅔ cup mascarpone
- ⅓ cup heavy whipping cream
- 8–10 ladyfingers (broken in half, depending on ramekin size)
- 4 shots Sundream Rooster Tail Espresso Blend (or ½ cup strong brewed coffee)
- 1 oz coffee liqueur (optional)
- Cocoa powder and/or chocolate shavings, for dusting
Method
- In a small bowl, whisk together the egg yolk and sugar until the mixture is light and frothy.
- Add the mascarpone and continue whisking until smooth and fully incorporated.
- Pour in the heavy cream and whip until stiff peaks form — about 2 minutes with a mixer or a bit longer by hand.
- Brew your espresso (or strong coffee) and pour it into a shallow dish with the coffee liqueur, if using.
- Quickly dip each ladyfinger into the coffee mixture, flipping to coat both sides — don’t let them soak too long or they’ll become soggy.
- Layer the dipped ladyfingers in the ramekins, then spread the whipped mascarpone mixture over the top. (You may opt for a second layer, depending on the size of your dishes.)
- Finish with a dusting of cocoa powder or chocolate shavings. Serve immediately and enjoy your mini pick-me-up!

- Mix up the flavor: Kahlúa pairs beautifully with coffee, but Amaretto or Frangelico also make delicious additions.
- Best served fresh: You can make this a few hours in advance, but overnight storage can make the ladyfingers soggy and the cream collapse.
