Balsamic-Truffle Salmon Salad

Our Balsamic–Truffle Salmon Salad does exactly that. Using two standouts from the Drizzle & Drip Box: Sabatino Organic Black Truffle-Infused Oil and Acetaia Malpighi Balsamic Vinegar of Modena (Aged 15–20 Years)—this salad layers crisp greens, warm balsamic-glazed salmon, roasted vegetables, and hearty grains into a refreshing, flavor-packed bowl that still feels special for the season.

Serves 4

Ingredients:

Salmon + Glaze

  • 4 salmon fillets (4–5 oz each)
  • 3 tbsp Aged Balsamic Vinegar of Modena
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil

Roasted Vegetables

  • 1 cup mushrooms, halved or sliced

  • 1 cup cherry tomatoes
  • 1 small zucchini, sliced
  • Salt & pepper

Salad Base

  • 6 cups mixed greens (arugula, spring mix, or spinach)
  • 1 cup cooked quinoa or farro (cooled or slightly warm)
  • ½ small red onion, thinly sliced
  • ½ cup shaved Parmesan (optional)

Dressing

  • 3 tbsp Acetaia Malpighi Aged Balsamic Vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • Salt & pepper

Finish

  • 1–2 tsp Sabatino USDA Organic Black Truffle Infused Oil
  • Fresh thyme or parsley

Instructions:

  1. Roast the vegetables: Preheat oven to 425°F. Spread mushrooms, cherry tomatoes, and zucchini on a baking sheet. Toss with olive oil, salt, and pepper. Roast 15–18 minutes, until tender and caramelized. Let cool slightly.
  2. Cook the salmon: Heat 1 tbsp olive oil in a skillet over medium-high heat. Pat salmon dry and season with garlic powder, onion powder, salt, and pepper.
    Sear salmon 3–4 minutes per side until just about cooked through.
    Add aged balsamic and Dijon to the pan; let it bubble and reduce into a sticky, glossy glaze. Spoon over salmon as it finishes cooking. Remove from heat.
  3. Make the dressing: Whisk together aged balsamic, Dijon, honey/maple syrup, olive oil, salt, and pepper.
  4. Assemble the salad: Layer greens, quinoa or farro, roasted vegetables, and sliced red onion. Top with warm balsamic-glazed salmon. Drizzle with the balsamic dressing.
  5. Finish: Add a light drizzle of Sabatino Black Truffle Infused Oil and fresh herbs.
    Sprinkle with shaved Parmesan if using.
