maybe hourly routine); I found my thoughts drifting and thinking about the pasta samples2 on my kitchen table. I was hungry (shocker) and thinking about what I was going to make my kids for dinner tonight. As I went to warm up my coffee and take a needed break from the day’s challenges., I rummaged in the fridge for a morning snack.

Homemade sausage from a friend, leftover spinach from the previous night’s salad and a couple of lemons stranded from a cocktail recipe… not exactly breakfast food but my night’s meal was started to come together in my head.

What I love most about this dish below is that you can substitute any type of loose sausage3 (chicken, turkey, beef or pork) and it still comes out delightful. Mark’s favorite way is made with chicken breast and mixed in a little dried basil, a touch of red pepper flakes, salt and pepper. Hope you enjoy it as much as our families did!
